Cinco de Mayo Steak Fajitas and Guacamole

I woke up this morning thinking about Steak Fajitas. In that brief  couple of minutes before I was truly conscious (but for some reason still able to think about food) I realized it was Cinco de Mayo and that we had an extra steak in the fridge from Friday’s Steak barbeque. My brain is an anomaly even to me. Then, the oddest thing happened. I woke up and checked my mobile phone for the time and any email messages. I had received several blog post notifications and the one at the top of the list was for Steak Fajitas from Craving of a Lunatic. It seemed like my brain and the Universe had collided on this very special day and was even scared to find out what would happen if I failed to make said Steak Fajitas for dinner.

My 18 year old pointed out that one steak would not be enough so I bought a bit more meat. Once home I marinated them in the laziest way possible…Italian salad dressing. Before you gasp and unsubscribe from my blog think about this for a moment.  Italian salad dressing contains oil, vinegar, garlic and spices. Everything you need to marinate a steak. Plus with the great temperatures we’re enjoying today I wanted to spend the least amount of time fiddling around in the kitchen. In the meantime, I’ve cleaned most of our bedding, the garage and all the leaves and winter sludge from the south side of our house.

Marinade cheating aside, these fajitas were delicious! I had a chance to use up all those orange peppers in my fridge. I served them with salsa, sour cream, grated old cheddar, and home made guacamole. I’m pretty picky when it comes to guacamole as I prefer to have it very smooth and with limited ingredients. I don’t like to add sour cream or tomato or anything other than avocados, onion, garlic, hot sauce and plenty of lime juice.

To make the guacamole; I add about 3 tbsp finely diced onion, about 1 tsp hot sauce, 1 tsp of minced garlic, and the juice of one lime to my hand blender attachment. I guess normal people use a food processor. I attempt to get the mixture to a smooth consistency but it really is a crappy blender.

Then I add the avocados one at a time in chunks and blend again. I think the onion mixture eventually does get blended up when there is more in the container. Eventually, after all 3 avocados have been added, I blend until everything is smooth and creamy. I finish it off with a sprinkling of salt and some  more lime juice on the top.

And the Steak Fajitas were a huge success…
