Summer Days Fly By

When you’re busy it seems like the weeks just fly by, especially during the summer. This week I was barely over Monday (the r on my keyboard quit working!) when I blinked and it’s the weekend again! August long weekend…where does the time go? Again, we have no solid plans but to enjoy our downtime. Today is Food Day Canada, a day when we celebrate Canadian food all across the country with special events and super fresh ingredients.

Food Day Canada

Our Canadian food is grown by hard working farmers and gardeners and we’re so lucky to have our choice of amazing ingredients from coast to coast. From BC Wild Salmon and Tree Fruits, to Prairie-raised beef and bright canola fields, and Québec’s maple syrup back to PEI’s potatoes, we have a whole country of delicious food to prepare. You don’t have to be a guest at a fancy long table dinner to take part, just visit your local farmer or farmer’s market and post your at home creation on-line using the #FoodDayCanada hashtag.

Delicious Alberta

Alberta beef is known to be some of the best beef in the world but there are so many other delicious ‘Albertan’ foods to explore. The other six recognized key Alberta signature foods are: Bison, Canola, Honey, Red Fife Wheat, Root Vegetables and Saskatoon Berries.  These are foods that have been historically grown here in the province and have stood the test of time and our tough climate. They represent the long standing, most important flavour essence of our land. Cultivated crops such as mustard, barley, and Durum Wheat also continue to play an important role with Alberta’s world economy.

Eating Fresh and Local 

 Canadian cheese is sometimes a bit difficult to track down and locally made cheese is even more difficult. The solution? Get to know your local cheese maker! A few weeks ago, my husband and I were invited out to tour Dancing Goats farm near Acme, Alberta. It’s barely an hour from our house. Paul and Craig are two ‘retired’ ballet dancers who just gave it all up for the farm life one day. Craig is the chief goat herder and cheese maker while Paul takes care of the business side of things, including being the chief cheese tester! So far they have 5 cheeses available, all named after some form of dance. They are all extremely delicious but I think Trata, a semi fresh feta inspired cheese, is my absolute favourite.

My Snap Pea Salad Inspiration

Right now, snap peas are prime picking in gardens everywhere and mint is fresh and plentiful. It’s an herb that grows quite easily in my garden and I’m always looking for ways to use it up. For this Snap Pea Salad, I decided to pair it with zesty lemon, sweet peas, and Dancing Goats Trata. This combination of flavours is absolutely outstanding; sweet peas with delicate mint, slightly salty feta, and bright lemon zest really had us (and our visitors) coming back for more. I really hope you have a chance to try out this recipe and don’t worry if you can’t track down Trata, any soft feta will make this salad sing.

Snap Pea Salad with Goat Feta

Snap Pea Salad with Goat Feta

This sweet and zesty Snap Pea Salad features locally made goat feta, fresh mint, and bright lemon zest. Enjoy this delicious salad tonight in less than 20 minutes!

Ingredients

  • 32 oz (907 g) bag stringless snap peas
  • 5 oz (150 g) fresh goat feta (or regular soft style feta)
  • 1 lemon; zested and juiced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sugar
  • 1/4 cup fresh mint leaves; chopped in a chiffonade
  • 2 cloves garlic; minced
  • 1/3 cup olive oil
  • 1/3 cup apple cider vinegar

Instructions

  1. Slice snap peas diagonally and place in a bowl or arrange on a platter.
  2. Scatter half of lemon zest over the peas. Finely mince the rest.
  3. Scatter mint over all and stir to combine (if desired).
  4. Scatter goat feta over all.
  5. Add finely minced lemon zest, lemon juice, salt, pepper, sugar, minced garlic, olive oil, and apple cider vinegar together in a small jar. Cover and shake until combined.
  6. Pour vinaigrette over the salad.
