How to Roast Potatoes in the Oven

To make these potatoes, begin by pre-heating your oven to 375 F. Peel the potatoes and let some sit in a bowl with cold water as you cut the rest into equally sized pieces.

Drain all the water from the bowl, then drizzle olive oil over top. Season with salt, lemon pepper and sumac, then toss the potatoes so that the are evenly coated.

Spread the potatoes in an even layer on a parchment lined baking sheet and place in oven. Roast for 30 minutes, then remove them from the oven, rotate, and flip them so all sides become brown.

How to Season Roasted Potatoes

The sky is the limit, really. Lemon pepper, lemon juice, lemon zest, and sumac are a great combination if you like a lot of citrus kick.

Regular salt and pepper are delicious too. Other flavour combinations could include the Scarborough Fair mix (parsley, sage, rosemary and thyme) or even just some dried dill. Lime and chili, garlic and Parmesan cheese…the list goes on!

How to Re-Heat the Potatoes

Roasted potatoes really are the best fresh out of the oven. However, if you do have leftovers, re-heat them stove top in a non stick skillet for a few minutes.

To re-heat in an oven, just pre-heat it to 400 F. Add the potatoes to a baking sheet and cover loosely with Aluminium foil. Re-heat for about 10-15 minutes.

    I’m with you, Bernice! We usually BBQ all year long too but this year was too brutal. I only shovelled a path to the BBQ 2 weeks ago!! Thank god the weather has finally turned for us! I just love lemon roasted potatoes! I worked in Greek restaurants for years so it was sort of ingrained in me 🙂 These look fantastic!
