Oven Baked Oregano Chicken and Potatoes


One medium sized whole chicken

4 medium-sized potatoes (peeled and sliced into wedges)

2 medium onions- sliced

1 medium-sized sliced tomato, or a handful of cherry tomatoes

4 table spoons olive oil

1 teaspoon garlic powder

2 teaspoons dried oregano

2 bay leaves

2 cardamom

1/4 cup tomato ketchup

1/4  cup water

Salt and pepper (to taste)

Wash chicken well (if you choose to). Cut into two.  Massage chicken very well with onions, salt, pepper, garlic, oregano, 3 table spoons olive oil and half quantity ketchup.  Season sliced potato wedges with salt and pepper and one spoon olive oil and arrange in the tray. Put the seasoned chicken on the potato wedges .  Add the bay leaves and cardamoms.  Arrange sliced tomatoes or cherry tomatoes on the chicken.  Sprinkle the chicken with some olive oil, rest of the tomato ketchup and oregano.  Add one quarter cup of water to the potatoes.  And put in 200C pre-heated oven for 75 min (no need to cover it)!
