Mushroom  Goat Cheese Filo Pastry Parcels

Looking for an easy appetizer recipe? Try these golden baked Filo Pastry Parcels filled with mushrooms, thyme, and goat cheese. These flavourful bites are an elegant canapé for any occasion.

INGREDIENTS

- olive oil - leek - mushrooms - goat cheese - salt and pepper - fresh thyme - Filo Pastry - Butter

Saute finely chopped mushrooms and leeks in olive oil. Let cool, then add thyme leaves and goat cheese. Season with salt and pepper.

Brush filo sheet with butter, then place another on top. Repeat two more times. Cut into four and place one tablespoon of mixture on each square.

Bring the pastry upward so that it holds the filling in a 'purse'. 1. Place each parcel on a parchment lined baking sheet and brush with melted butter. 1. Bake for 25 minutes at 375F.
