While this passion fruit tea makes one 15 oz serving, I highly recommend having extra pineapple, passion fruits, and jasmine tea bags on hand. You never know when you’ll crave another glass or make multiple iced teas!

What is Jasmine Tea?

Jasmine tea is a type of tea scented with jasmine blossoms. This unique Chinese tea blend may contain contain green tea, white tea, oolong tea, or black tea as a base which becomes infused with the delicate floral fragrance of jasmine blossoms.

The process is quite labour intensive as blossoms must be picked early in the morning when they are still closed. They are stored all day until they begin to open and release their scent. The jasmine blossoms are then layered into the tea and left to infuse overnight.

This process may be repeated multiple times, with each result becoming more and more infused and of higher quality.

To brew jasmine tea, add 1 teaspoon loose tea (or one tea bag) to one cup of boiled water. Allow it to steep for 2 – 3 minutes, then strain. Allow it to chill overnight to enjoy it as iced tea.

Ingredients for Pineapple Passion Fruit Tea

Fresh tropical fruit and unique tea are the main ingredients in this recipe. As always, I encourage you to experiment and adjust the recipe to your liking. For example, if you don’t have access to fresh passion fruit, feel free to use frozen passion fruit pulp. Or substitute with another sweet/sour tropical fruit like guava or mango.

Ingredients required to make Pineapple Passion Fruit Tea.
  • Pineapple
  • Passion Fruit
  • Lime
  • Simple Syrup
  • Jasmine Tea
  • Ice

When buying a pineapple, choose it based on appearance (golden yellow, not green or brown), aroma (sweet and fruity, not fermented), texture (it should have a slight give when squeezed and no soft spots) and it should be heavy for its size. The centre leaves of a ripe pineapple should separate easily when pulled.

A ripe passion fruit will be heavy for its size, have a deep purple or yellow colour, and should be slightly wrinkled. Avoid any that are too smooth or too wrinkled.

For this recipe you can use 1 teaspoon of loose tea or a tea bag. Feel free to substitute green, white, oolong, or black tea for the jasmine tea.

To make simple syrup or honey simple syrup, pour 1 cup of water and 1 cup of granulated sugar (or honey) in a saucepan. Stir and heat the mixture on medium high heat until it simmers, and the sugar has dissolved. Cool to room temperature.

How to Make Pineapple Passion Fruit Tea

Note that you will need to plan ahead to chill the jasmine tea and make simple syrup for this recipe.

Begin by chilling a 20 oz pint glass in the fridge or filling it with ice. Next, place the pineapple chunks in a cocktail shaker then scoop the passion fruit pulp and add it into the shaker.

Use a cocktail muddler to gently muddle the pineapple and passion fruit to release the juices and aromas.

Squeeze fresh lime juice from the lime wedges, then add them to the shaker. Pour in the simple syrup.

Gently muddle the fruit again to draw out the zesty citrus flavour from the lime. Be gentle—don’t over-muddle the lime or it will become bitter.

Remove chilling ice from the serving glass and refill it about 1/2 full of fresh ice cubes.

Finally, pour the chilled jasmine tea into the glass over the ice then strain the muddled fruit mixture into the glass. Stir gently and garnish with dried pineapple slices, fresh mint leaves, or pineapple leaves. Serve immediately.

Recipe Tips and Tricks

  • Feel free to use canned pineapple chunks if fresh is unavailable.
  • Taste and adjust: Add more syrup if you like it sweeter, or a bit more lime if you want a tangier flavor.
  • Use ripe fruit: Ripe pineapple and fragrant passion fruit make all the difference—sweeter and juicier!
  • Chill the tea: Brew the jasmine tea ahead of time and let it chill in the fridge to avoid watering it down with melting ice.
  • No cocktail shaker? Use a bowl to muddle the fruit, then strain with a fine mesh strainer.
  • Prefer a more textured drink? Skip the final straining step and enjoy the fruit pulp with every sip.
  • Lime muddling tip: Be gentle—press and twist lightly to release aroma without extracting bitter oils from the peel.
  • Blending is an option if you don’t mind a thicker, smoothie-like texture. Muddling keeps the drink more refreshing and tea-forward. If you are blending the fruits, squeeze in the lime juice instead of adding them in wedges.
  • If you prefer a sweeter drink, you can add another ½ to 1 tablespoon simple syrup or adjust to your taste.

Make Ahead and Storing Leftovers

To batch make this Pineapple Passion Fruit Tea ahead of time, brew and chill the jasmine tea then make the muddled fruit mixture. Store them separately and combine just before serving. Serve over ice.

Store leftover tea in an airtight container or pitcher in the refrigerator. Pineapple Passion Fruit Tea is best enjoyed within 2–3 days. For better shelf life, strain out the pulp and lime wedges before storing to prevent fermentation or bitterness.
