Grilled Peach Fruit Salad

You haven’t had the ultimate feast of summer peaches until you’ve tried a Grilled Peach! Add in some fresh buratta and you can call it ‘dinner’, I certainly won’t judge! In this house…we love all things peachy keen, including this Bourbon Peach Pie and Coconut Crumble Peach Custard Pie. You can never have enough pie during peach season. 

Grilled Peach Fruit Salad with Burrata and Lime Basil Vinaigrette makes the most out of the early summer fruits while also welcoming mid summer fruits. It’s a simple salad that is BIG on flavour! Simply arrange your favourite grilled fruits around a ball of creamy fresh burrata and dinner is done. I grilled a few of the first peaches that I bought because they are still quite firm and easy to slice in half. They soften right up on the barbecue, with the heat releasing all the sugars hidden within the stone fruit. Add some pitted and halved cherries, some blueberries and whatever other fruits you have.

What is Burrata and Why do I Need It?

Burrata is fresh Italian cheese made from either cow or buffalo milk. It consists of soft shell filled with a creamy centre. Once you cut into it, the creamy centre flows over the salad and mingles with the fruit. The result is incredibly delicious! 

You might think that the burrata is not necessary for a great fruit salad (and with the lime vinaigrette it just may be) but if you pick one up, you won’t be sorry you did. The addition of the fresh creamy cheese really elevates this salad to another level. We actually ate this salad as a main dish one evening. YOLO.

How To Grill Peaches and Other Stone Fruit

The best grilling peaches/stone fruit have an intense aroma (sniff test!) but are still quite firm and easy to slice in half.

To grill, simply pre-heat your barbecue to high and give it a good scrub. Brush some olive oil on the cut side of the peach and place the same edge on the hot grill. Grill until you can see the peach visibly soften, then remove carefully. They can be slippery!

Lime Basil Vinaigrette

Lime and basil? I was skeptical at first but this vinaigrette is packed FULL of flavour and it’s crazy easy to whip up. Just blitz it all in a blender and season to your taste. This stunning dressing really ties the whole dish together.

Grilled Peach Fruit Salad with Burrata and Lime Basil Vinaigrette

A delicious combination of grilled peaches, cherries, and fresh blueberries served with fresh burrata. Top it with Lime Basil Vinaigrette for the perfect Summer salad.

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 2 firm fresh peaches; halved
  • 1 cup blueberries
  • 1 cup fresh cherries; pitted and halved
  • 1 250 g fresh burrata
  • zest of one lime
  • 1/4 cup fresh lime juice
  • 1 tbsp honey 1/2 cup fresh torn basil leaves 1/2 cup olive oil
  • 1/2 cup fresh torn basil leaves
  • 1/2 cup olive oil
  • pinch of salt

Instructions

    1. Pre-heat barbecue on med-high for five minutes and give the grate a good clean with your brush.
    2. Brush cut edge of peaches with a bit of olive oil. Place cut side down onto the hot grate and leave for about 10 minutes or until they have softened up a bit. Remove and cool.
    3. Place lime zest, lime juice, honey, basil leaves, and olive oil in a food processor and pulse until smooth.
    4. Arrange fruit around burrata and drizzle vinaigrette all around. Enjoy!

    WOW! this salad looks so good. Love the dressing and the burrata. Have you ever had stracciatella? I hope I spelled it right. When we ate at a restaurant in Eataly in NYC, we ordered it with grilled bread. It’s the INSIDE of burrata. Can you imagine???!!! Like triple cream. See if you can find it. Ican’t but maybe online….

      yes! I have…it was inside this burrata. That’s what made it so much like eating peaches n cream. So good!! We’re lucky to have such a great Italian store nearby.
