It all begins with a crisp green lettuce wedge, but the flavour profile escalates quickly. Iceberg lettuce is essentially flavourless (am I right?!) so this toothsome salad relies heavily on a variety of tasty toppings. In other words, it’s not the size of the wedge but what you do with it that counts!

The toppings for this extraordinary salad are a selection of inviting tidbits, sure to get your mouth watering. From the sweet tart strawberries to the briny feta and toasty almonds, this salad goes above and beyond the classic wedge salad. If you love crunchy textures and fresh flavours, this is the salad for you.

The Classic Wedge Salad

To wholeheartedly appreciate art, you must first learn the basics, then you will understand the artist’s perspective. Similarly, this Strawberry Feta Wedge Salad would never exist without the existence of the legend that is Wedge Salad.

Essentially a wedge salad is a large single wedge of lettuce (usually a quarter of a head iceberg lettuce), accompanying toppings, and salad dressing.

For a more traditional wedge salad presentation, make this blue cheese dressing recipe or use ranch dressing and serve the salad with croutons, blue cheese crumbles, bacon bits or slices bacon, cherry tomatoes, and chopped chives or red onion.

Wedge Salad is a survivor. From its 1920’s debut on a plethora of restaurant menus to the iconic crumbled blue cheese, bacon bits, buttermilk blue cheese dressing recipes of the 1950’s. This classic wedge salad is here to stay.

  • Almonds
  • Feta Cheese
  • Oil
  • Lemons
  • Honey
  • Dijon Mustard
  • Salt
  • Black Pepper
  • Fresh Mint (optional garnish)

While pre-cut lettuce is convenient, I recommend beginning with a whole head of iceberg lettuce and cutting it into wedges just before serving to keep it fresh and crisp. Otherwise, the edges may begin to brown. To save time, pre-wash the lettuce and refrigerate it, cutting into wedges prior to assembly.

To keep the strawberries fresh, wash and hull them just before assembling the board. Store strawberries in the refrigerator, unwashed until you’re ready to assemble. If making the board in advance, add the strawberries just before serving.

You can use crumbled feta cheese or block feta cheese and crumble it yourself. Queso Fresco, Cotija, and Paneer cheese make great substitutes for feta cheese. Alternatively, serve the salad with grilled Halloumi.

Buy fresh almond slices or slivers and toast them as needed. Store unused almonds in the fridge or freezer to extend their shelf life. Always taste nuts before using in a recipe to prevent off flavours.

Though part of the beauty of this salad is its simplicity, you can add additional fruits like blueberries, melon balls, citrus or grapes for more flavour diversity. You can also include a mix of greens, such as arugula or spinach to complement the iceberg lettuce.

How to Make a Strawberry Feta Wedge Salad

One of the best things about this salad board is that it’s so easy to prepare. After you whip up the Lemon Vinaigrette and arrange the prepared ingredients, your guests do the rest!

Make the Lemon Vinaigrette

To make the vinaigrette, place oil, lemon juice, lemon zest, honey, and Dijon mustard in a blender or tall jar. Blend until there is no separation of oil and lemon juice. Do not over emulsify. Alternatively add ingredients to a bowl and whisk until emulsified.

Season vinaigrette with salt and freshly ground black pepper to taste. Place in small pitchers or one larger pitcher if using individual dipping bowls.

Prepare and Arrange the Wedge Salad Board

Next, it’s time to prepare the salad. Begin with cleaning the iceberg lettuce. Remove any wilted or brown outer leaves and wash the outside of the lettuce. Dry lettuce well with a paper towel. Finally, use a sharp knife to slice each head of lettuce into four equal wedges.

Removing the core is not necessary but if you prefer to, start by smashing each head of lettuce on the counter core side down. Flip the lettuce over and remove the core. Slice into four wedges.

To prepare the strawberries, wash and hull them then cut them in half or in quarters. Toast the almonds slices in a dry pan until they are lightly browned and aromatic.

Now it’s time to arrange the prepared salad ingredients on the salad board. Firstly, arrange the eight, iceberg lettuce wedges. Next, separate each topping into two bowls or small jars and place around lettuce wedges.

Garnish the board with sliced lemons and fresh mint (if using), adding a pop of colour and freshness. Add serving spoons to each bowl of toppings and tongs for the lettuce wedges. Finally, set the table with salad plates, salt and pepper. Guests can pour, dip, or spoon the dressing over their salad as desired.

Adding Protein

Enhance the board by adding a protein option. Grilled chicken, shrimp, or even tofu are excellent additions and can take this wedge salad from a side to a satisfying main dish. Grill them separately and place them on or next to the board just before serving to maintain their freshness and temperature.

How to Serve and Eat Wedge Salad

Creating this salad on a serving board allows guests to serve themselves. You can include the suggested toppings or get creative and add some of your own. Place the lemon vinaigrette in individual or group serving pitchers and pour dressing or spoon dressing over the salad. Alternatively, provide small bowls for guests to dip their salad into.

If you’ve never had a wedge salad, eating one can be quite daunting. The easiest way to eat a wedge salad is to sink the fork firmly into the middle of the wedge and use a knife to cut a bite sized piece. Do not slice the entire salad at once. Lastly, dip the salad bite and toppings in a dressing bowl (if using) before taking a bite.

Ingredients

  • 2 heads of iceberg Lettuce; cleaned and cut into 4 wedges each
  • 2 lbs fresh Strawberries; hulled and sliced
  • 16 oz Feta Cheese; crumbled
  • 8 oz sliced Almonds; roasted
  • lemon and fresh mint leaves for garnish (optional)

FOR THE LEMON VINAIGRETTE (makes 2 cups)

  • 1 cup Avocado Oil
  • 2/3 cup fresh Lemon Juice
  • 4 tsp Lemon Zest
  • 1/4 cup Honey
  • 4 tsp Dijon mustard
  • Salt and black Pepper to taste

Instructions

FOR THE LEMON VINAIGRETTE

    1. Place oil, lemon juice, lemon zest, honey, and Dijon mustard in a blender or tall jar. Blend until emulsified. Do not over blend, just blend until the oil is fully dispersed and there is no separation of oil and lemon juice.
    2. Season vinaigrette with salt and freshly ground black pepper to taste. Set aside.

FOR THE WEDGE SALAD BOARD

    1. Arrange the eight, iceberg lettuce wedges on a large serving board or platter.
    2. Separate each topping into two bowls and place around lettuce wedges.
    3. Place the lemon vinaigrette in a jar or bowl with a serving spoon.
    4. Garnish the board with sliced lemons and fresh mint (if using), adding a pop of color and freshness.
    5. Add serving spoons to each bowl of toppings and tongs for the lettuce wedges.
    6. Serve immediately.
