Parsnips can be polarizing. Everyone loves carrots, but parsnips are sometimes a hard sell. When they are at their prime, this unique root vegetable has a sweet, earthy flavour second to none. However, if they are past their prime, they can have a strong musty flavour and woody texture.
This is the parsnip recipe that will change the mind of any parsnip skeptic. In this post, I outline how to choose the best parsnips for roasting and which ones to avoid. This ensures you start with the best produce with the highest flavour potential.

Not only will they have the best flavour, but your roasted parsnips are guaranteed to be perfectly caramelized and tender, not woody and chewy.
I’m a huge fan of roasting cruciferous and root vegetables. Roasting converts the vegetable starches to sugars, which then caramelize as they condense. The result is a huge explosion of natural vegetable flavour.

Once you’ve roasted parsnips, you won’t go back to parsnip purée. You’ll love how easy this veggie side dish recipe comes together and how seamlessly it pairs with a variety of other main dish recipes.
Ingredients for Roasted Parsnips
For this recipe you will need a vegetable peeler, a sharp knife and cutting board, a baking sheet, parchment paper, a mixing bowl, measuring spoons, and a citrus zester.

- Parsnips
- Olive Oil
- Garlic Powder
- Sea Salt
- Black Pepper
- Thyme
- Lemon
- Italian Parsley
This is a basic roasted vegetable recipe. I love that there are only 8 ingredients and even those are not set in stone. Feel free to the olive oil with your favourite high smoke point vegetable oil for roasting.
Besides the salt and black pepper, you can also add some onion powder or even red pepper flakes for a little hint of spice.

A splash of fresh lemon juice and hit of lemon zest brighten up the flavour and add a little acidity to this sweet veggie side dish.
How to Choose Parsnips for Roasting
Choosing the right parsnips makes all the difference when you are aiming for crispy edges, tender interiors, and that signature sweet, earthy flavour. Because parsnips can turn woody or bitter if they are too old or massive, keep a few key physical cues in mind while sorting through the produce bin:

- Look for parsnips that are roughly the size of a medium-to-large carrot (about 1 to 2 inches in diameter at the top). They have a sweeter flavour, tender flesh, and very little woody core to worry about.
- Give the parsnip a gentle squeeze. It should feel completely firm and rigid, not squishy and bendy.
- Look for a clean, creamy beige to pale yellow skin. Avoid parsnips with deep wrinkles, dark bruised patches, or severe cracking.
- Fresh parsnips should have a clean, mildly sweet, and earthy scent. If they smell musty or sour, leave them there.
How to Make Roasted Parsnips
Begin this parsnip recipe by preheating your oven to 425°F. Next, line a large, rimmed baking sheet with parchment paper or lightly coat it with cooking spray. Wash, peel, and cut parsnips in half lengthwise.

Place the parsnips in a bowl then drizzle olive oil over all and season with the garlic powder, salt, pepper, and thyme. Toss to coat. Arrange the parsnips in a single layer on the prepared baking sheet cut side down. Don’t overcrowd!
Roast parsnips for 25–30 minutes, flipping halfway through, until the parsnips are tender and caramelized around the edges. While the parsnips are still hot, toss them with the lemon zest, lemon juice, and parsley in the same bowl. Taste and adjust the salt and pepper as needed. Serve warm.

Recipe Tips and Tricks
- Can I use dried thyme? Yes, but fresh is so much better!! Substitute about ¾ teaspoon dried thyme for the fresh thyme.
- Serving suggestions: These roasted parsnips pair beautifully with roast chicken, turkey, pork tenderloin, beef roast, grilled salmon, or vegetarian grain bowls.
- Cut away the tough top stem and core the largest parsnips down the center if the middle ring looks fibrous.
- For the best caramelization: Avoid overcrowding the baking sheet. Giving the parsnips space allows them to roast instead of steam.
- Add extra flavour: Sprinkle with grated Parmesan cheese or toasted chopped pecans just before serving for an extra layer of flavour and texture.

Make Ahead and Leftovers
To prepare ahead of time, you can peel and cut the parsnips up to 24 hours in advance and store them submerged in cold water in the refrigerator. Drain and pat dry before roasting.
Store cooled leftovers in an airtight container in the refrigerator for up to 4 days and reheat in a 400°F oven or air fryer for 5–8 minutes to restore their crisp edges, adding extra time if necessary. They can also be microwaved, though they will be softer.
