Homemade doesn’t always have to mean ‘made from scratch’ and sometimes the best soup recipes are the ones with the shortcuts. This Tomato Tortellini soup is one of those quick and satisfying meals the whole family will love.
It all begins with aromatics like garlic and onion sautéed to perfection. Then there’s the seasonings… no Italian soup recipe is complete without basil and oregano! Tie it all together with a rich chicken broth (homemade or store-bought!), a can of diced tomatoes, tomato paste, and coconut milk.

The final touch is a bag of premade frozen tortellini. Call it your little secret if you want but this addition is the perfect (and easiest!) way to dress up a bowl of tomato soup. Don’t forget to top your bowl with torn fresh basil and a generous amount of freshly grated Parmesan cheese!

The best thing about homemade soup is that there are no unpronounceable ingredients, it’s just wholesome tasty food!
- Butter
- Onion

Feel free to sauté the onion and garlic in butter or olive oil. Use store bought chicken stock or make your own using this recipe. Pro tip: Batch make and freeze chicken broth in soup recipe portions.
You can also replace the chicken stock with vegetable broth and leave out the flour (and use gluten free tortellini) for a fully gluten free version.

I like to use cheese tortellini, but you can add tortellini with meat or sun dried tomato filling.

How to Add Cream to Tomato Sauce
Have you ever made a lovely tomato soup or sauce only to have it ruined by curdled cream? We’ve all been there! While curdled cream doesn’t ruin the flavour of the dish, it can be unpleasant to look at. After all, we eat with our eyes first!
There is no coming back after milk curdles because the protein separates from the butterfat and water when the acidity increases. This reaction also happens when you use coconut milk. However, here are a few handy tips to PREVENT dairy from curdling in acidic sauces and soups.

- Use fresh cream. It will have less lactic acid than cream that has been in the fridge for a while.
- Choose heavy cream over light cream or milk. The high fat content makes the dairy more stable.
- Start with a roux or add a cornstarch slurry. Starches like flour and cornstarch help stabilize the milk solids.
- Temper the cream. Sudden changes in temperature can cause milk proteins to clump together. Gradually heat the cream by stirring 1-2 tablespoons of the hot soup to the cream, repeating the additions until the cream is noticeably warmer.
- Do not boil. Once you add the cream, do not allow the soup or sauce to come to a boil. A gentle simmer is okay.
How to Make Tomato Tortellini Soup
You can have this tasty soup ready and on the table in under 30 minutes… here’s how to do it!

Begin by melting butter or adding olive oil to a large soup pot or Dutch oven over medium heat. Next, add diced onions and minced garlic. Cook the aromatics for 3-4 minutes, stirring frequently.
When the veggies have softened slightly add the dried basil, dried oregano, and red pepper flakes. Season with sea salt and freshly ground black pepper then cook for an additional minute.
Sprinkle in the flour and stir so all the veggies become coated. Continuously stir for 3-4 minutes to cook the flour roux then add the tomato paste. Slowly whisk in 1 cup of chicken broth at a time, whisking continuously to avoid any clumps of flour. Add in the crushed tomatoes and coconut milk.

Bring the soup to a simmer then add frozen tortellini. Simmer for 10 minutes or until the tortellini is fully cooked. NOTE: If you want to make this soup ahead of time (recommended) or anticipate leftovers, boil the tortellini according to package directions and add to each bowl before serving.
Serve Tomato Tortellini Soup garnished with hand torn fresh basil and freshly grated Parmesan cheese.
Recipe Variations
