Obatzda (German Beer Cheese Dip)

Obatzda is a creamy, slightly sweet Bavarian Beer Cheese Dip flavoured with earthy paprika, and a faint bitterness from beer. This beer garden classic is traditionally served with soft pretzels, cold Oktoberfest beer, and enthusiastic friends.

There’s no better biergarten duo than Soft Pretzels and Obatzda. However, you can serve this addictive cheese dip all year long as a Brotzeit, or snack meal. It’s delicious with rye bread, radishes, cucumber slices, sliced raw onion, chives, sausages, and pickles. It’s also great as a sandwich spread!

Obatzda

When the days become noticeably shorter and cooler and the leaves start turning colour, it’s time for Obatzda. I may be a long way from a German beer hall, but I always serve a bowl or two during the fall season.

This is a standard Bavarian cheese dip recipe featuring ingredients available in North American grocery stores. Start with finely chopping a round of camembert cheese (with or without the rind), add room temperature cream cheese and REAL butter then thin it out with a bit of your favourite Oktoberfest or wheat beer (Weißbier).

What is Obatzda?

Obatzda, also spelled Obatzter, Obazda, Obatzter, or Gerupfter Käse according to Bavarian regional spelling is a tangy, yet creamy soft cheese spread or dip. It traditionally contains not one, but two types of cheese (including camembert), beer, raw onion, chives, paprika, and a little bit of butter.

In most recipes, caraway seeds are standard but other flavourings may include garlic, horseradish, or cloves.

For authenticity’s sake, this rustic dip is usually served cold alongside soft pretzels or bread. It has a creamy yet slightly chunky texture due to the chopped soft cheese. Thin it out with a bit of German style mild beer (like Paulaner), any Oktoberfest beer, or your favourite mild alcohol-free beer.

The runnier the camembert is, the creamier and more flavourful the dip will be. Leave in the rind (unless you don’t enjoy the funky flavour) and grate in the onion so that the intense flavour is spread throughout the dip.

For this recipe you will need measuring cups and spoons, a bowl, a cheese grater, sharp knife, and cutting board.

Camembert is a soft, surface-ripened cow’s milk cheese originating from Normandy in northwestern France. It is famous for its bloomy white rind, gooey interior, and deep earthy flavour profile. If you love more pungent or intense flavours, use a very ripe, soft round of Camembert and leave the rind on.

If you prefer a milder flavour, use a younger Camembert or round of Brie cheese and leave the rind off.

Use full fat room temperature Cream Cheese for a creamy texture and ease of preparation. If you are watching sodium intake, use unsalted Butter and season with Salt as needed.

Traditional Bavarian Weissbier or Helles are the best beers to use in Obatzda. Since the recipe only calls for a small splash (1–3 tablespoons) to lighten the texture and add depth, choose a traditional style you will enjoy drinking alongside the spread. Feel free to use a Märzen or Dunkel for a richer, bolder flavour but avoid anything overly hoppy or dark.

For an alcohol-free version, use a splash of non-alcoholic Weissbier (wheat beer) or Helles, milk, cream, non alcoholic apple cider, or sour cream.

A touch of Sweet Paprika adds a grounding, earthy flavour and gives Obatzda its signature colour while Caraway Seeds (whole or toasted and ground) add that quintessential German flavour.

I find that grating the Onion allows it to melt into the cheese dip, but you can also finely dice the onion before you add it. The flavour will mellow out as the dip sits.

How to Make Obatzda

It’s best to begin with a very soft, room temperature Camembert or Brie cheese. Use a fork or pastry cutter to mash it in a shallow bowl until it is mostly smooth.

Next, add the softened cream cheese, unsalted butter, and grated onion. Continue mashing to blend then stir in beer, paprika, caraway, and freshly ground black pepper.

When the preferred texture is achieved, stir in the chives then taste and adjust seasoning. For best flavour, let it sit for 30–60 minutes at room temperature before serving.

How to Store Leftover Obatzda

While I’ve never had any leftovers to store, I do like to make Obatzda ahead of time. Store your German Beer Cheese Dip in an air tight container in the fridge for 3-5 days. Note: the onions will become stronger as the dip ages.

Ingredients

  • 7 oz (200g) ripe Brie or Camembert; very soft
  • ½ cup cream cheese
  • 3 tablespoons unsalted butter; softened
  • 2 tablespoons beer (mild lager or wheat beer recommended)
  • 2 teaspoons sweet paprika
  • ½ teaspoon caraway seeds (optional, lightly crushed)
  • ½ small onion, very finely minced or grated
  • 2 tablespoons minced chives
  • oz Salt and pepper to taste

Instructions

    1. Mash the Brie/Camembert cheese until mostly smooth.
    2. Add the cream cheese, butter, and onion, and continue mashing to blend.
    3. Stir in beer, paprika, caraway, and black pepper.
    4. When you have the preferred texture, stir in the chives. Taste and adjust seasoning.
    5. Let it sit for 30–60 minutes at room temperature before serving.
