Oven Baked Truffle Fries

Just when you thought fresh cut fries couldn’t get any better, Truffle fries enter the chat. Truffle fries are the king of sides. Perfectly tender inside, golden and crispy on the outside… they are the ultimate side dish to any burger or grilled meat.

A bowl of Oven Baked Truffle Fries is a bowl of pure hedonistic comfort. The tender and crispy potatoes make the perfect canvas for grated Parmesan and earthy truffle. Finally, the fresh parsley adds a hint of herbal sharpness, cutting through the richness.

Forget deep frying and hot oil splashes, oven baked fries are just as delicious and dare I say healthier for you. Add in some truffle oil and grated Parmesan cheese and no one is the wiser. Everyone says these Truffle Fries are truly addictive and difficult to share. Before long, they will become your go to barbecue side.

Once you’ve made this Oven Baked Truffle Fries recipe, you will never go back to plain fries. In fact, it’s debatable whether you even need ketchup for dipping or not. I do love a side of ketchup. However, these extra special fries deserve a more elevated dip like aioli. When it comes to Parmesan truffle fries, are you team ketchup or team aioli?

What are Truffles?

Truffles are a type of edible fungal spore that grows near certain types of trees.  Unlike typical mushrooms, truffles grow underground and only in specific climates.  Trained dogs or even pigs are used to sniff them out.  Authentic truffles can go for thousands of dollars depending on the variety. This scarcity makes them known as culinary gold.

Black truffles are a less aromatic but a little easier to source. To simplify, they come in two varieties. Winter Truffles (or Périgord Truffle) grow in in Italy, Spain, and France and are available from November to March, peaking in January and February.

The Summer Black Truffle looks similar its winter counterpart and is fragrant, but more subtle than a white truffle. They are available, weather depending, from May to the end of August.

Ingredients for Oven Baked Truffle Fries

  • Russet Potatoes
  • Parmesan Cheese
  • Olive Oil
  • Dried Parsley
  • Black Pepper
  • Fresh Parsley
  • White Truffle Oil
  • Black Truffle Salt

I find that Russet Potatoes make the best oven fries. They are high in starch and have a low moisture content which results in a fluffy interior and golden crispy exterior. They also the perfect shape for cutting longer fries.

In place of Parmesan Reggiano, you can use grated Pecorino, Grana Padano, Asiago, or even Spanish Manchego.

If you don’t love parsley, feel free to leave it out. I’ve also made this recipe with dried and fresh thyme and rosemary. These three herbs all work well with truffle.

Truffle oil delivers an unmistakable earthy, umami-rich flavour while truffle salt is more subtle. Both can be used to finish many types of dishes. Try truffle salt over roasted veggies or even scrambled eggs.

When choosing truffle oil and truffle salt, quality matters. Carefully read the labels to be sure the product contains real truffle and not a synthetic replication. If you can, slice some fresh truffle or sprinkle dried truffle powder over top of the hot fries in addition to the truffle salt.

Note: Do not use Truffle oil in place of olive oil to bake the fries. It is considered a finishing oil because it is heat-sensitive and will lose all its flavour when heated.

How to Make Oven Baked Truffle Fries

To begin, preheat the oven to 450F and line a large baking sheet with parchment paper.  Set aside.

Scrub the potatoes then slice them lengthwise into ½ inch sticks (or batonettes). Immediately place cut potatoes in a bowl of cold water and soak for 5 minutes. Drain the sliced potatoes well and use a paper towel to pat them dry. Transfer to a large bowl.

Drizzle the olive oil over the potatoes, add ¼ cup of the parmesan cheese and the dried parsley. Using your hands, work the ingredients thoroughly until all pieces are coated well.

Spread the coated potatoes in a single layer on the prepared baking sheet.  For best results, leave space between each piece. Place pan on middle rack in the preheated oven and bake for 15 minutes.

Toss or turn each fry then return the tray to the oven. Cook for an additional 10-15 minutes until cooked through with a golden brown and crispy exterior.

While still on the hot baking sheet, drizzle truffle oil and a few pinches of black truffle salt over the fries and let rest for 5 minutes. Just before serving, sprinkle with grated Parmesan cheese and fresh chopped parsley.

Leftover Storage and Reheating

Are you kidding?  These fries will disappear in no time. However, in the rare instance that you do have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or air fryer, not a microwave, at 375F for 5-7 minutes or until heated through. 

Finish with a small drizzle of truffle oil and parmesan cheese. Be aware that reheating will likely change the texture, so don’t leave any option for leftovers!

  • ½ cup grated parmesan cheese, divided
  • 1-2 tablespoons olive oil
  • 1 tablespoon dried parsley
  • 1 teaspoon ground black pepper
  • 2 tablespoons white truffle oil
  • 1-2 tablespoons chopped fresh parsley
  • Few pinches black truffle salt

Instructions
