Sausage Stuffed Acorn Squash

The moment the autumn air turns crisp, we all instinctively lean into cozy comfort food. Enter this seasonal Sausage Stuffed Acorn Squash recipe. It’s a vibrant, fork-tender centrepiece that captures the very best flavours of the season. It is as stunning on a holiday table as it is comforting on a quiet Tuesday night.

Flavour wise, the natural maple-like sweetness of roasted acorn squash provides an incredible canvas for the bold, savoury richness of pork sausage. Packed with wholesome ingredients, this dish feels decadent while remaining naturally gluten free and easily adaptable to dairy free diets.

These stuffed acorn squashes are at the top of my list for easy dinner recipes. They require very little effort, each half is the perfect size for one portion, and dinner is ready in about 60 minutes. Serve them with a side salad, more roasted vegetables, dinner rolls, or crusty bread for a complete meal.

How to Choose Acorn Squash for Roasting

Choosing the right acorn squash makes all the difference between a watery texture and sweet, caramelized, fork-tender perfection. Here are four key things to look for when choosing an acorn squash.

  1. Check the Colour (Look for the Ground Spot): A ripe acorn squash should be mostly deep, dull dark green. Avoid shiny skins (which mean it was picked too early and will lack flavour). Look for a single patch of orange or creamy yellow where it rested on the ground—that “ground spot” proves it ripened on the vine in the sun. If the whole squash is turning orange, it’s overripe, stringy, and past its prime.
  2. Test the Weight: Pick it up. A good acorn squash should feel surprisingly heavy for its size. Weight indicates moisture and dense, meaty flesh rather than dry, fibrous interior cavities.
  3. Inspect the Stem: Look for a dry, intact, woody stem. If the stem is missing or wet and moldy, moisture has likely gotten inside, which accelerates rotting.
  4. Give It the Scratch Test: Press your fingernail gently against the skin. If it easily punctures the skin, it’s unripe. A mature squash has a tough, hard rind that resists a fingernail test.

Ingredients for Sausage Stuffed Acorn Squash

For this recipe, you will need a sharp knife, a cutting board, a large baking sheet, parchment paper, a large skillet, wooden spoon or spatula, measuring spoons and measuring cups, and a cheese grater.

  • Olive Oil
  • Salt
  • Ground Pork Sausage
  • Garlic Herb Boursin Cheese
  • Mushrooms
  • Yellow Onion
  • Garlic Cloves
  • Fresh Thyme
  • Sea Salt
  • Black Pepper
  • Mozzarella Cheese

As is with most of my recipes, this acorn squash recipe is highly adaptable. If acorn squashes are not available, use a small butternut squash and adjust the roasting time. Or serve the filling on top of a roasted and shredded spaghetti squash.

Instead of ground pork sausage mixture you can use mild or hot Italian sausage meat. If you can’t find loose fresh sausage meat, simply remove the meat from the casings before frying. Or simply substitute with your favourite ground beef, chicken, or turkey and season accordingly.

Use alternative flavours of Boursin cheese or use plain cream cheese and top with Mozzarella cheese or any other melty cheese. Try Provolone cheese, Monterey Jack, Oaxaca Cheese, Fontina, Gouda, or a mild Cheddar cheese. Sprinkle grated Parmesan cheese over the melty cheese for even more cheese flavour.

Feel free to add other diced vegetables such as bell peppers, zucchini, or tomatoes. Finally, you can substitute your favourite fresh herb for the thyme, if preferred.

How to Make Sausage Stuffed Acorn Squash

Start this recipe by reheating your oven to 400°F and lining a large baking sheet with aluminum foil or parchment paper.

Prepare the acorn squash by cutting it in half from stem to tip then scoop out the seeds. Next, drizzle the cut sides with olive oil and season with a light sprinkle of salt. Place the squash halves cut side down on the aluminum foil/parchment paper.

Roast the squash for 30-45 minutes, or until the flesh is fork tender. NOTE: Larger squash may require additional baking time.

Make the Sausage Filling

While the squash roasts, prepare the filling. In a large skillet over medium heat, cook the ground pork sausage until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

Add the diced onion to the skillet and cook for 4-5 minutes, or until softened. Stir in the diced mushrooms and cook for another 3-4 minutes, until they begin to soften. Next add the minced garlic and chopped thyme. Cook for a couple of minutes, stirring frequently to prevent the garlic from burning.

Return the cooked sausage to the skillet. Stir everything together, then add the Boursin cheese and mix until melted and evenly incorporated. Season with the salt and freshly ground black pepper, then taste and adjust seasoning if needed. Remove the skillet from the heat.

Allow everything to cool a bit, then stir in most of the shredded mozzarella, reserving a small amount for topping. Once the squash is tender, carefully turn each half cut-side up.

Spoon the filling evenly into each squash half and sprinkle with the reserved mozzarella. Return the stuffed squash to the oven and bake for 5 minutes, or until the cheese is melted and bubbly.

Serve hot with a crisp green salad, roasted Brussels sprouts, or crusty bread for a complete meal.

Recipe Tips and Tricks

  • Select similar sized squashes for even cooking.
  • If your squash is on the smaller side, you may have leftover filling. Use it as a topping for baked potatoes or make an additional roasted squash.
  • Mozzarella adds a mild, creamy finish, but other good melting cheeses work well too. Provolone is an excellent substitute.

Storing the Leftovers

Store leftover Stuffed Acorn Squash in an airtight container in the refrigerator for up to 3 days.

Reheat in a 350°F oven for 15-ish minutes, or microwave individual portions until heated through.

  • 2 large Acorn Squash; cut in half and seeds removed
  • 1-2 Tablespoons Olive Oil
  • Salt

FOR THE SAUSAGE FILLING

  • 1lb Ground Pork Sausage
  • I/2 package Garlic Herb Boursin Cheese
  • 8 oz baby Portobello Mushrooms; diced
  • 1 cup Yellow Onion; finely diced
  • 2-3 Garlic Cloves; minced
  • 2 Tablespoons Fresh Thyme; chopped finely
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon ground Black Pepper
  • 1 cup Mozzarella Cheese
