Our First Barbecue of 2019

Whew. It’s been a long cold winter. Every day of 2019 has been well below the seasonal average. As die hard barbecue enthusiasts, we usually barbecue through all kinds of weather conditions. However, it was much too cold to even attempt to barbecue until last weekend. On Sunday, when that burger crave hit hard and the weather cooperated, we were good to go. Where there’s burgers…there’s fries!

Oven Roasted Potatoes

To make these oven roasted potatoes, begin by pre-heating your oven to 350 F. Peel the potatoes and let some sit in a bowl with cold water as you cut the rest into equally sized pieces. Rotate. Drain, then drizzle olive oil over top. Season, then toss the potatoes so that the are evenly coated. Spread the potatoes in an even layer on a parchment lined baking sheet and place in oven. Roast for 30 minutes, then remove them from the oven, rotate, and flip them so all sides become brown.

How to Season Roast Potatoes

The sky is the limit, really. Lemon pepper, lemon juice, lemon zest, and sumac are a great combination if you like a bit of ‘zip’. Regular salt and pepper are delicious too. Other flavour combinations could include the Scarborough Fair mix (parsley, sage, rosemary and thyme) or even just some dried dill. Lime and chili, garlic and parm…the list goes on!

How to Re-Heat Roasted Potatoes

Roasted potatoes really are the best fresh out of the oven. However, if you do have leftovers, re-heat them stove top in a non stick skillet for a few minutes. To re-heat in an oven, just pre-heat it to 400 F. Add the potatoes to a baking sheet and cover loosely with Aluminium foil. Re-heat for about 10-15 minutes.

These perfectly roasted potatoes are so easy to make. Add lemon juice and zest for brightness and a sprinkle of lemon pepper for a bit of a peppery kick. Finish with some fresh thyme right out of the oven.

Nutrition per portion

    Ingredients
    • 8 small potatoes
    • 2 lemons; zested
    • 1 tsp sumac
    • 1/2 lemon pepper
    • olive oil
    • salt
    • a few sprigs of fresh thyme (optional)
    Method
    1. Pre-heat oven to 350 F and line a baking sheet with parchment paper.
    2. Peel the potatoes, then halve lengthwise. Cut each half lenghtwise into 3 equal pieces. Adjust if needed to achieve equally sized pieces.
    3. Add potatoes to a bowl and toss with the rest of the ingredients except fresh thyme. Drizzle with the juice of one lemon.
    4. Bake for 30 minutes, then flip potatoes over to achieve even browning. Return to oven and bake for another 20-30 minutes.
    5. Remove from oven and scatter fresh thyme leaves (if using). Serve with lemon wedges or grilled lemon halves.

      It’s still only morning and I’m totally craving these lemony tatos! I could legit make a meal out of these along, but I bet they would be lovely with some chicken or even for b fast with a nice fried or poached egg. See, now I’m reeeeeally hungry 😉

      I’m with you, Bernice! We usually BBQ all year long too but this year was too brutal. I only shovelled a path to the BBQ 2 weeks ago!! Thank god the weather has finally turned for us! I just love lemon roasted potatoes! I worked in Greek restaurants for years so it was sort of ingrained in me 🙂 These look fantastic!
